** Panorama Knives

The creator had the idea to have a mountain panorama as the serrated edges of a bread knife. It worked beautifully and the Panorama bread knife was born. ** New cheese: Ticino Lucendro

We first looked into this cheese when Tom was in Switzerland in February this year. Then there were a few market tests and now we can finally reveal this beautiful cheese. The name already gives us a clue to its origin, Ticino. Ticino is the Italian speaking canton in the South of Switzerland and that’s where this two months matured, grey mould cow’s milk cheese is from. The second part of its name, Lucendro, is the name of a 2,963m high mountain on which base this cheese is produced at. This alpine area is rich in minerals giving this cheese a unique aroma. The Ticino Lucendro also shows a relatively soft paste and a balanced taste. Additionally it melts very well. You can find it currently at Leo’s Fine Food & Wine in Kew or at Spring St Grocer in Melbourne’s CBD.
