** Autumn means cheese is back on the menu!
————————————————————
Hi Cheese Friend,

In many States around Australia March marks the start of the leaves changing colour, shorter days and lower temperatures. Whilst many of you might fear the end of beach weather, autumn actually is a brilliant time; with moderate temperatures allowing for a wonderful a combination of indoor and outdoor entertaining and – in our view most importantly – the official return of the cheese as a fixed part of the meal. Whether it’s an apéro with a combination of bubbly and our Rolf Beeler Sbrinz (https://www.alpineexpress.com.au/our-cheese/selection-rolf-beeler-alp-sbrinz/) , a kipfler potato gratin with our raclette cheese (https://www.alpineexpress.com.au/our-cheese/selection-rolf-beeler-raclette/) as a side dish or a selection of our artisan Swiss cheese (https://www.alpineexpress.com.au/our-cheese/) for dessert, the choice is yours!

Here at the headquarter of The Red Cow, March also marks an important preparation month for some exciting, upcoming events. So, if you’re based in Melbourne, two are definitely worthwhile marking on your calendar:

** Swiss Festival, Melbourne

During the interval, a Swiss DJ will spin “Alpensounds” and – wait for it – authentic, delectable specialities will be offered. Yes, you guessed correctly, The Red Cow will be providing some of our specially selected Rolf Beeler cheese for everyone to taste.

The Red Cow is going to Western Australia!

** In February The Red Cow goes west
————————————————————
Hi Cheese Friend,

This is an exciting month for The Red Cow and even more so for everyone in Western Australia with an appetite for high quality, artisan Swiss cheese. Why? Well, we are proudly launching our Rolf Beeler range in Australia’s biggest state this week! With our local distributor, Blue Cow, there is definitely a natural synergy between the two companies. So, watch this space as we will be updating our ‘where to buy (https://www.alpineexpress.com.au/where-to-buy/) ’ and ‘where to eat (https://www.alpineexpress.com.au/where-to-eat) ’ pages online to include a full list of Western Australian stockists.

This month also marks the official launch of our new video, ‘The story of artisan Swiss cheese’. In it Tom reports directly from the Toggenburg in Switzerland where he explores the production of our Rolf Beeler Toggenburger (https://www.alpineexpress.com.au/our-cheese/selection-rolf-beeler-toggenburger/) and gives us a behind the scenes look at the making of true artisan cheese. He also gives some insight into just how the Swiss like to shop and eat this national favourite. So, why not give yourself a 5-minute cheese-break and watch the video?

https://www.alpineexpress.com.au/video-story-of-artisan-swiss-cheese/

Did you like that? On a different note, many of you have asked us about our connection to Rolf Beeler. We have now finally updated our about-us pages (https://www.alpineexpress.com.au/home/about-the-red-cow/) to provide you with the these answers.

And – to finish off – we thought we would open the Red Cow photo album and share a few happy snaps from the past few weeks. Enjoy!

Hi Cheese Friend,

They say it’s either great weather or cheese weather. We mostly prefer the latter, but then who doesn’t like a nice, hot summer? Well, we certainly got a taste of that last week here in Melbourne – our Raclette cheese didn’t need an oven to do its melting trick, that’s for sure.

But summer is also great as we see an increase of fabulous events. With the Australian Open here the town is a buzz with excitement and The Red Cow is now part of the action. We are immensely proud to be partnered with Shannon Bennet of Vue de Monde and to be able to offer our wonderful cheese to the VIP guests of a high profile, Swiss tournament sponsor.

While sadly we can’t influence the guest list of that event, there is another event coming up soon which we’d love to see you at: the inaugural “Fromage a Trois” Festival at Werribee park (http://www.fromageatrois.com.au) . With a tagline of ‘Cheese, Cider & You’ it was impossible for us not to jump at the opportunity. The one-day event takes place on Sunday, 2^nd February at the picturesque and super-family-friendly Werribee Park (pictured). Mark the date, bring your friends and families along and celebrate the day with us in this beautiful surrounding together with delicious food & beverage. We will be located right next to our dear friends from the Ciderhaus and be offering a selection of our finest raw milk cheese paired with bread from EDS Breads (https://www.facebook.com/pages/EDS-Breads/219270271560939) – all in a handy picnic box for you to consume right there and then.

So, see you at one of our retailers or at “Fromage a Trois” on the 2^nd February!

Hi Cheese Friend,

Firstly we wanted to proudly announce our first Sydney retailer and welcome them to The Red Cow family. From this weekend the newly opened Gourmet Life Shop (http://gourmetlife.com.au/) at 52-60 New South Head Road in Darling Point, Sydney will stock the beautiful, raw milk Sélection Beeler Vacherin Fribourgeois (https://www.alpineexpress.com.au/our-cheese/selection-rolf-beeler-vacherin-fribourgeois-aoc/) and Gruyère AOC Extra (https://www.alpineexpress.com.au/our-cheese/selection-rolf-beeler-gruyere-aoc/) . So if you’re in Sydney this silly season, head to Gourmet Life for your cheese platter essentials – if not, tell someone who is in Sydney! We would certainly appreciate it!

Okay the festive season is here, so it’s definitely time we talk cheese platters for your Christmas and NYE functions!

This year we have asked three of Melbourne’s most influential cheesemongers to give us their personal recommendations for what would make a knock-out cheese board. Their task was simple: pick any three of our cheese and two ‘wild cards’ to create a superb Christmas or NYE cheese platter.

So, let us present, the cheese platters:

Bill
Bill’s Farm, Queen Victoria Market

clockwise from top left:
Sélection Beeler Vacherin Fribourgeois (raw milk, 7 months matured, washed rind, Fribourg/Switzerland), Sélection Beeler Hagebuttenkäse (raw milk cheese with dried rose hips, Toggenburg/Switzerland), Mountain Goat Blue (mild goats milk blue by Red Hill Cheese Company, Mornington Peninsula/Victoria), Sélection Beeler Gruyère (raw milk, 18 months matured, Gruyère Region/Switzerland), Boosey Creek Cheese Boosey Soft (creamy, handcrafted camembert, Boosey/Victoria).

https://www.alpineexpress.com.au/downloads/theredcow_xmas_platter_bernard.pdf
And before we go, there’s this: If you’ve already christened your 2014 calendar, we have a special date for you to reserve: Mark Sunday, 2nd February 2014 red as The Red Cow we will be setting up shop at the inaugural “Fromage à Trois” – cheese & cider event in beautiful Werribee park. More information and tickets can be found here (http://www.experiencewyndham.com.au/attractions/fromage_a_trois/masterclassestickets) .

This leaves us to thank you for your support in 2013 and to wish you and your family a Merry Christmas, filled with laughter, happiness and plenty of artisan cheese!

Bringing you beautiful raw milk cheese from Switzerland to your door

Lost Cow – help find our little red cow!

** November brings tales about the little red cow
————————————————————
Hi Cheese Friend

First of all we’d like to welcome a tonne of newly subscribed cheese fans from the Taste Festival. Wow, what a festival it was: We served over 1,500 cheese boxes to the VIP ticket holders and made lots of new friends. We also gave away six unique cheese knives to the lucky winners of our Taste competition.

The Red Cow at Taste of Melbourne 2013

Before we introduce the newest cheese to our family of artisan Swiss cheese, we’d like to tell you two tales of our little red cows. The first incident happened at the Taste Festival when Tom thought it would be a great idea to have a ‘Red Cow’ representative standing proud on the VIP bar during the event. He placed one excited little Red Cow next to the Laurent Perrier display on the bar and – gee – she looked lovely. Half way through the day, Tom wanted to check on the well-being of the little Red Cow, only to discover she had disappeared. Outraged, we now believe someone nicked her! Can you believe it!?

The little Red Cow swimming in the Yarra A matter of days later, once again Tom had a great idea: He wanted to have another little Red Cow stand in for a creative Christmas photo shoot. He placed her on a bridge over the Yarra River in Melbourne and started shooting her at various angles. He thought she looked good, but wanted to try a few more adventurous poses so placed her even closer to the edge of the railing. Then, suddenly, out of nowhere a wind gust took her up into the air and blew the poor little Red Cow straight into the cold, brown Yarra. Well, some lucky fisherman will end up with a new toy now!

Luckily for Tom and for you all, we do have a few more of the little Red Cows available. Bill’s Farm, Walmas and Delicatess, for example, are selling them now, just in time for Christmas. They make great toys (or floating devices in Tom’s case!).

** Our newest arrival: Büffel Trüffel
————————————————————
But now to what we’re actually here for: artisan Swiss cheese! November brought a new shipment and with that a new and exciting cheese to Australia. One we have been watching very closely and are very excited to introduce is the glamorous ‘Büffel Trüffel’ from master cheese maker and friend of Rolf Beeler, Willi Schmid. Translating to ‘Buffalo Truffle’, you might guess that it’s made from buffalo milk and contains truffles. But not just any buffalo milk or any truffle, no, no, no, it’s artisan Swiss buffalo milk from a small herd of Rumanian breed water buffalo, located not far from Zurich and black truffle from the Neckertal (Necker Valley), located close to the cheese maker in the Northeast of Switzerland. The cheese is creamy and teeming with that amazing black truffle flavour. It’s a real knock out! Mouth-watering for sure with a price tag to match. But hey it’s Christmas only once a year, right? This one will make you the star of any Christmas party.

Willi Schmid’s Bueffel Trueffel (buffalo milk and black truffle)

You can find the Büffel Trüffel at Leo’s Fine Food & Wine in Kew, Spring St Grocer in the Melbourne CBD and Bill’s Farm at the Queen Victoria Market.

We also received new stock of the Sélection Beeler Vacherin Fribourgois, Gruyère, Hoch Ybrig, Alp Dräckloch, Toggenburger and Raclette so there’s plenty to go around this Christmas and New Year’s Eve. Check out our tasting schedule (https://www.alpineexpress.com.au/our-events/) for details of where you can taste some of these varieties first hand! And as always, our extensive list of Victorian stockists can be found at landingwww.alpineexpress.com.au/where (https://www.alpineexpress.com.au/where) .

Happy cheese munching.

The Emme Valley – origin of the Emmental cheese in Switzerland

** Welcome artisan Swiss cheese lover!
————————————————————
Hi Cheese Friend

Thank you for providing us your details at Taste of Melbourne. This year’s Taste of Melbourne is over, but ‘Taste of Life’ continues. It certainly was a fabulous four days in beautiful Albert Park. Whilst some of you had to battle the elements during the earlier days, others were rewarded with beautiful sunshine towards the second part of the event. The one thing in common was everyone had a really great time.

Rolf Beeler Selection Box We had a blast and appreciated all your amazing feedback about our artisan Rolf Beeler cheese box. From what we heard our included cheese, the 18-month matured Rolf Beeler Gruyère and the 3-month pre-alpine, Rolf Beeler Raclette really hit the spot!

Thank you for entering our competition to win an artisan Swiss cheese knife, we can now happily announce the winners.

Congratulations go to:
* Paul O.
* Simone R.
* Ann T.
* Peter W.
* Lisa M.
* Jackie W.

** What artisan cheese range do you offer?
————————————————————
https://www.alpineexpress.com.au/our-cheese/
You can find several more varieties (https://www.alpineexpress.com.au/our-cheese/) from our Sélection Rolf Beeler range of premium, artisan Swiss cheese, be it the highly acclaimed Toggenburger (https://www.alpineexpress.com.au/our-cheese/selection-rolf-beeler-toggenburger/) , the 18-month matured Emmental (https://www.alpineexpress.com.au/our-cheese/selection-rolf-beeler-emmental-aoc/) , the white wine treated Hoch Ybrig, the over the wood fire cooked Alp Dräckloch (https://www.alpineexpress.com.au/our-cheese/selection-rolf-beeler-alp-drackloch/) or the washed rind Vacherin Fribourgeois (https://www.alpineexpress.com.au/our-cheese/selection-rolf-beeler-vacherin-fribourgeois-aoc/) , the choice is yours!

Whatever variety, all of our artisan cheese comes from supreme Swiss alpine pastures, most located at altitudes higher than 800m above sea level guaranteeing the freshest and most nutrient rich raw milk*, the base ingredient for all our cheese. Following a careful, artisan and mostly small-batch production method, all of our cheese is matured to perfection by acclaimed Maître Fromager Rolf Beeler. Rolf guarantees personally for the quality of each of the wheels by working closely with the individual cheese makers. Watch this video (http://www.youtube.com/watch?v=CmTjmwQmTL4) to find out even more about our cheese.

** October – it’s still cheese weather!
————————————————————
Hi Cheese Friend

Glancing outside, it looks more like the October we know from Switzerland: off and on rain and relatively cold temperatures. Well, that’s Melbourne in spring for you. But then they say there are only two types of weather: nice weather and cheese weather. So, it’s actually perfect!

** Taste of Melbourne is back!
————————————————————
In less than 3 weeks the annual Taste of Melbourne festival returns to Albert Park. This year we are once again the official cheese supplier for the Laurent Perrier VIP area and, in addition to last year, we are offering each VIP ticket holder a free artisan cheese box containing two of our finest Sélection Beeler, alpine cheeses.

You can benefit too because as a partner of the Taste of Melbourne festival we can offer you a ticket special: Book your tickets through www.ticketek.com.au/tasteofmelbourne and enter PARTNER in the promotional code box to get 2 tickets for $40 (safe $10). You may then consider using the extra money to upgrade to the VIP ticket on the day in order to enjoy our wonderful Rolf Beeler cheese box.

Plus, because we love our newsletter subscribers, we give away 2 tickets valid for either the Thursday 14^th November, 5.30 to 9.30pm, Friday, 15^th November, 12 to 4pm or the 5.30pm to 10pm session. The first person to respond to this email address with subject line “Taste Festival” (mailto:[email protected]?subject=Taste%20Festival) will get the tickets.

Taste of Melbourne runs from 14^th to 17^th November in the stunning surrounds of Albert Park. See you there!

** What red cow?
————————————————————
http://store.landingwww.alpineexpress.com.au/products/swiss-red-cow
Some of you might have spotted our lovely, wooden red cow at our events. Many people asked us whether they can buy one of these hand-crafted Swiss beauties, so we decided to ship some over.
You can now get them directly from our online shop (http://store.landingwww.alpineexpress.com.au/products/swiss-red-cow) . Also some of our retailers (e.g. Delicatess in the Prahran market or Walmas in Bayswater) stock a few. The red cow retails for $19.95.

** Our Toggenburger cheese maker
————————————————————
Last but certainly not least, we would like to introduce you to another one of our cheese makers from Switzerland: Stephan

Name: Stephan
Region: Toggenburg (northeast Switzerland)
Cheese produced: Toggenburger, Hagebuttenkäse

Stephan, pictured above cutting the curd, and his wife Bettina run a small cheese production in the picturesque Toggenburg. He gets his milk delivered twice a day from the surrounding farmers. Some deliver it by tractor, others in the back of their car. One thing is sure, the wonderful raw milk is as fresh as it gets and is of course the key ingredient for Stephan’s creations.

Stephan produces the Hagebuttenkäse and the Toggenburger for our Sélection Beeler range. The former, a newer cheese, we introduced in our 1st August newsletter (http://eepurl.com/C5mdL) . To recap, Hagebutte is German for rose hip, the fruit of the rose plant. The dried and shredded rose hip is added to the milk during production and is then rubbed on the outside before it is matured for 4 months. Rolf Beeler then adds a white mould to the outside, making the rind dry and giving it a rustic look.

The Hagebuttenkäse is currently available on the dessert menu at the newly opened No. 8 by John Lawson at the Crown Casino at the cheese room at Richmond Hill Café & Larder.

So, enjoy the rest of the cheese weather, think of Stephan and his artisan cheese production high up in the Toggenburg when you taste his cheese and don’t forget to put the Taste of Melbourne festival into your dairy.

Happy cheese munching.
