The Emme Valley – origin of the Emmental cheese in Switzerland

It truly seems to be all happening in September!

We’ve recently received our latest shipment from Switzerland and with that a few spectacular new cheeses (one of which we will introduce to you today), we also increased our distribution channel and last but not least, we have secured a number of exciting events that we are ready to announce.

** Sélection Beeler Muotathaler Alp Dräckloch

First, let us introduce you to our newest cheese: the Alp Dräckloch (pictured above). This certainly is a cheese with an interesting name as it translates to ‘Alpine Dirty Hole’. Yep. So, what’s so dirty about it? Nothing really, the name stems from the alp it is produced in. The Alp Dräckloch is a true Alpage cheese which is only produced during the summer months, high up in the Swiss mountains.

There the cows graze between 1,200 and 1,800m above sea level. High altitude is important as the grass variety is greater leading to a more distinct, floral tasting cheese. The cheese is then produced by a fifth generation cheese maker using a traditional method over an open wood fire. Its taste is very unique and could be described as having a hint of meat broth, a touch of smokiness and a very long finish. Rolf Beeler says: “This is how cheese was made 200 years ago!”.

This amazing cheese is currently stocked at Leo’s Fine Food & Wine (all locations), Spring St Grocer in the City, Darriwill Farm in Ivanhoe and Scicluna’s in Glen Iris. Then there’s Richmond Hill Café & Larder which will feature it in the October version of their Cheese Club (http://rhcl.com.au/cheese-club) which is available nationally. We’ve just completed a very busy event period, which saw a series of high profile, private events across Melbourne and Sydney for one of Switzerland’s most famous watchmakers. In October we are one of the sponsors of the annual golf tournament at the Royal Melbourne Golf Club, organised by the Swiss Australian Chamber of Commerce (http://swissambassadorcup2013.floktu.com/) . Guests will be able to enjoy a fantastic Rolf Beeler cheese dessert course as part of the exclusive dinner on the day. Then November brings the next big event for us: Taste of Melbourne (http://www.tasteofmelbourne.com.au/) . The annual food & restaurant festival returns to Albert Park having realised a huge success last year during the first outdoor version of the festival. This year will be even bigger with restaurants like Tonka and Movida already on the line up. As for The Red Cow, we’re very proud to again be the official VIP cheese partner. The Emme Valley – origin of the Emmental cheese in Switzerland

Wow, August has definitely turned out to be a very busy cheese month for us. With winter clearly here, we haven’t stopped convincing young and old to eat more quality cheese. We spent many hours on the retail floor sharing our wonderful artisan cheese to as many potential customers as we could find. From Leo’s Fine Food and Wine in Kew to the specially organised Swiss National Day picnic in Heidelberg, we shared samples from our full range and met some great people along the way.

Then there were the events and media involvement too. Tom for example cooked up a full fondue for Triple R’s food radio show “Eat It” a couple weeks back. We also still fondly remember our Beer and Cheese matching event with Slow Beer at the end of July and this week’s Wine & Cheese matching class with renowned Richmond Hill Cafe & Larder.

In last month’s newsletter (http://eepurl.com/CvRc1) we promised you portraits of our cheese producers and immediately kicked off with Didier, our Gruyere producer. This month we move East to the German part of Switzerland and our iconic Rolf Beeler Emmental AOC:

Name: Hansruedi
Region: Emme Valley (about 40km from Berne, Switzerland’s capital)
Cheese produced: Emmental AOC*

Hansruedi (pictured above and below with Tom) and his wife Silvia run the small diary farm in the Emme Valley which gives the cheese it’s name. These days most Emmental you find in the market are actually produced elsewhere in Switzerland, so it’s a delight to see a passionate cheese maker producing authentic cheese in the actual region it originated from. It surely doesn’t get much better than this. And when Tom asked Hansruedi why he thinks this is the best place on earth to produce this particular cheese, he didn’t hesitate long before telling Tom to drive him up to a nearby hill. There he pointed out the few hundred year old trees, where he likes to have a rest every now and then. But more importantly, from this beautiful spot you get a perfect 360 degree view of the landscape, the farms, hills and pastures where the cows graze that produce the sensational milk that’s the main ingredient for the Rolf Beeler Emmental. This picture shows it nicely:

Hansruedi and his small crew run a true artisan production. They only produce two wheels of Emmental each day. The wheels then get carefully treated – initially on a daily, later on a bi-weekly or weekly basis in the heated cellars of the dairy farm. After about 4 months the Emmental wheels are assessed for their quality by tapping on them with a type of hammer. The sound coming back tells the cheese maker the quality and size of the iconic eyes (holes) that have developed. Only the very best of those are then selected for the Rolf Beeler Selection and matured for a further 14 months. Hansruedi is very proud of his cheese, but one element concerns him. He told me it’s very hard to find passionate people willing to put in a lot of hard work for this wonderful product. Starting to come of age, Hansruedi worries that he might not find a successor soon enough so that his craftsmanship can be passed on. We certainly hope he will find one!
*AOC stands for “appellation d’origine controlee”, which translates as “controlled designation of origin”.

Artisan Swiss cheese from Rolf Beeler to celebrate Swiss National Day

** 1st August is Swiss National Day

Tomorrow is Swiss National Day – a date that, according to Wikipedia, is inspired by the date of the Federal Charter of 1291, placed in “early August” (primo incipiente mense Augusto). The document is one of several dozen pacts attested for the territory of Switzerland in the period of the mid-13th to mid-14th century.
Wow, 1291! That’s old, isn’t it? It means Switzerland will celebrate its 722nd birthday tomorrow. You surely need a lot of breath to blow out the candles on that cake!

To celebrate this special day, we thought we do what we do best and present you with a new artisan Swiss cheese that we just got in from Switzerland: The Sélection Beeler Hagebuttenkäse. The what? Let us explain: Hagebutte is German for rose hip, the fruit of the rose plant and Käse is, well, cheese of course. Here’s a photo of the gorgeous cheese:

The dried and shredded rose hip is added to the milk during the production and is then also rubbed in on the outside before it is matured for 4 months. This then is also the time when Rolf Beeler adds a white mould to the outside. The dairy farmer of this cheese is the same person who also produces our beloved Toggenburger.

Where can you get it? We’re glad you asked – the wonderful cheese is currently available at Bill’s Farm in the Queen Victoria Market (http://www.billsfarm.com.au/) .

Speaking of Bill’s Farm, to celebrate Swiss National day, the lovely guys also put up a special on our Sélection Beeler Emmental. What better way to celebrate Swiss National Day than to have the most iconic Swiss cheese (and one of our favourites!) on your cheese board?

Tom is back from his trip to Switzerland and has brought with him a tonne of stories, our July newsletter and a suitcase full of samples of new and exciting cheeses from around Switzerland! Some of which might soon be coming to a shop or restaurant near you – stay tuned!

One of the highlights of the trip for Tom was spending time with some of the most important producers of Rolf Beeler’s Sélection cheeses. These cheese makers are dedicated and inspirational people and were so amazing that we would like to introduce some of them to you over the next few newsletters.

To kick things off, we’re introducing Didier (photographed below with Tom in the maturing cellar).

Name: Didier
Region: French speaking part of Switzerland
Cheese produced: Gruyère AOC*

Didier is the Gruyère producer and delivers the base product, which means he produces the 35kg wheels using the traditional methods applied for hundreds of years in this region and then care takes the cheese for the first 3 months of its life. After that, the Gruyère wheels are assessed for their quality and upon meeting the strict Gruyère AOC* criteria, Rolf Beeler’s team collects the cheese and lovingly transports it to another maturing place where he applies his magic in the affinage transforming the base product in the subsequent 15 months into the unforgettable Gruyère we enjoy.

Didier truly lives for the Gruyère. Twice daily, 7 days a week he receives the fresh raw milk from the surrounding farmers, all of them located on a pre-alpine plateau that lays roughly 800m above sea level. Each morning after the delivery of the milk, Didier and his team produce one batch and one batch only of Gruyère, according to the strict AOC regulations. But Didier’s involvement goes even further – he is the head of a social club for artisan cheese makers in the region. The group even have a Gruyère song and every time it’s played Didier confessed he gets goose bumps. If that isn’t passion, we don’t know what is! And that passion – we’re sure you’ll agree – comes right through in the end product, the award winning Rolf Beeler Gruyère AOC.

First of all welcome to all new subscribers – we’re surely growing nicely! And to all existing ones, thanks for your loyalty in reading our artisan cheese news!

Well June brought us the official start of winter and here in Melbourne, like the flick of a switch, the cold weather arrived too. But of course, being a cheese company means we love this time of the year! Finally there are no more excuses for putting off that hearty winter meal, aperitivo or dessert. Surely our artisan cheese fits into any of these courses on any cold winters day!

Especially over a cosy retro fondue party. Yes, they are back!

A reminder, in last month’s newsletter, we introduced our new Rolf Beeler ready-made artisan Fondue mix (https://www.alpineexpress.com.au/our-cheese/) . After impressing some of you early adopters with what is the highest quality, yet quickest and easiest winter delicacy we’ve also made quite a stir in the media (https://www.alpineexpress.com.au/in-the-news/) . John Lethlean, a food journalist at The Australian wrote a nice column about his experience when he, back in the day, travelled through Switzerland and came across a tea towel covered with a fondue recipe. He of course tried it out. Then -years later – he tried our Rolf Beeler ready-made Fondue mix and concluded that it’s so easy that there should really be a tea towel with a recipe saying “Buy, Eat, Heat”.

Well, we couldn’t resist! Here’s the evidence of Tom, our Managing Director, handing over a custom made tea towel to John earlier this month, courtesy of The Red Cow:

Now, looking ahead, there are a few things that are happening in the next couple of weeks. First of all Tom is heading to Switzerland to explore the local dairy scene. He will be talking to Rolf Beeler as well as many of Rolf’s hand selected cheese makers first hand. Maybe he will even encounter one of the scenes as shown in our title photo. What ever happens, one thing is sure, he will come back with many stories and probably a bag full of (edible?) surprises!

In late July we’re doing a beer & cheese matching event at Slow Beer in Richmond (http://www.slowbeer.com.au/) . More details are following shortly. And, Sunday, 4th August, The Red Cow will be part of the annual Swiss National Day event at the Austrian Club in Heidelberg, Victoria.

New from The Red Cow: Rolf Beeler’s Artisan Fondue Mix

** May brings the Fondue back

Hi Cheese Friend

Fondue is back? Yes, it is and eager “Mad Men” viewers would have already spotted this about a month ago when Don Draper enjoyed the beautiful Swiss dish with his wife Megan at the episode that started season 6. But that show plays in the late sixties you say? Correct, that’s even more reason to finally bring back this classic.

This time, however, we bring the real stuff to Australia: a delicious, ready-made, artisan Fondue mix from Rolf Beeler. It contains the Rolf Beeler Gruyère AOC, the Vacherin Fribourgeois AOC and a mountain cheese from the Valais along with white wine, Kirsch and maize starch. All you need now is find a few friends (the packet is easily enough for 6 people if you have it as a starter or a nibble), then heat it up in a Caquelon (or a saucepan) and dip some top-class, crusty white bread into it. Voilà.

Well, our headline isn’t quite correct, as at The Red Cow, it’s always cheese season. But with the days getting shorter and the temperatures slowly decreasing, eating cheese regains its firm place on many menus. Speaking of menus, it’s a well known fact that Melbourne’s chef elite is constantly reinventing itself, sometimes with entirely new creations and sometimes with evolving old classics. The latter holds true for Virginia Plain’s new burger creation, a bio beef burger served between a delicous bun and topped with a slice of our own Rolf Beeler Gruyere AOC. Some of you joined our cheese lover’s community at our Melbourne Food & Wine Festival event early March at Shelley Panton’s pottery studio in Middle Park – welcome! The event – the table setting is pictured above – was a great success with 30 diners tasting our selection of six artisan Swiss cheeses, perfectly matched to wines from Montalto Wines and their friends from around the world. If you missed this event, fear not, as you now have the opportunity to attend a “remake version” of it this Sunday, 7 April 2013 at Montalto Vineyard & Olive Grove in the Mornington Peninsula. The event is presented by Anthony from Montalto and our very own Tom as part of Montalto’s regular, first Sunday of the month wine series. It’s February and with it our events period kicks into full swing. First up is the Swiss Festival on Sunday 17th February where we will be serving our Rolf Beeler Raclette cheese melted over locally produced potatoes. This surely will be a great day for the whole family as there will be entertainment, food and more to learn about the Swiss culture. But February is also the month when all events for the 2013 Melbourne Food & Wine Festival go on sale. The full program is released in The Age today and with that, we can now officially unveil our first ever participation in the festival as we present
Cheese, Wine & Objects: Artisan Swiss cheese meets boutique Victorian wine. Showcased on Shelley Panton’s handcrafted artisan objects, the six cheeses will be handpicked and matured by Switzerland’s ‘Pope of Cheese’, affineur Rolf Beeler.

It doesn’t get better than that – our full range of artisan cheese presented by our own Tom Merkli in Shelley Panton’s wonderful studio in Middlepark. But that’s not all, we were able to secure Montalto Wines that will be matching our cheeses with their extraordinary Victorian wines.
