** Panorama Knives

What’s cheese without a good cheese knife? And what’s cheese without bread and a decent bread knife? We’re proud to be the sole Australian importer of the famous, Swiss designed Panorama knives. The creator had the idea to have a mountain panorama as the serrated edges of a bread knife. It worked beautifully and the Panorama bread knife was born. A little later the cheese knife was added to the product range, providing that crucial “cut out” in the form of the mountain panorama in the centre of the knife.

** New cheese: Ticino Lucendro

We first looked into this cheese when Tom was in Switzerland in February this year. Then there were a few market tests and now we can finally reveal this beautiful cheese. The name already gives us a clue to its origin, Ticino. Ticino is the Italian speaking canton in the South of Switzerland and that’s where this two months matured, grey mould cow’s milk cheese is from. The second part of its name, Lucendro, is the name of a 2,963m high mountain on which base this cheese is produced at. This alpine area is rich in minerals giving this cheese a unique aroma. The Ticino Lucendro also shows a relatively soft paste and a balanced taste. Additionally it melts very well. You can find it currently at Leo’s Fine Food & Wine in Kew or at Spring St Grocer in Melbourne’s CBD.

Cheese Trolley at Vue de Monde, Melbourne To finish off, let us unveil where the title photo was taken: it’s the beautifully curated cheese trolley at one of Melbourne’s top restaurants, Shannon Bennett’s Vue de Monde (http://www.vuedemonde.com.au/) . Hi Cheese Friend

Today is Swiss National Day – a date that, according to Wikipedia, is inspired by the date of the Federal Charter of 1291, placed in “early August” (primo incipiente mense Augusto). The document is one of several dozen pacts attested for the territory of Switzerland in the period of the mid-13th to mid-14th century.

Wow, 1291! That’s old, isn’t it? It means Switzerland celebrates its 723rd birthday today. You surely would need a huge cake to fit all the candles on to it.

So, congratulate Switzerland and congratulate yourself for being a fan of one of the best known products from the old country: Cheese of course!

** Swiss Picnic in Heidelberg this Sunday

Hi Cheese Friend,

By now everyone in Victoria (and probably in other parts of the country) has surely felt the cold of this year’s version of winter. Yet isn’t it a fantastic time of the year? As without regrets you can dig into heart warming artisan cheese, consume melted raclette in raw quantities and savour delicious Fondue by the gallon. Well at least that’s what we tell ourselves (and practice of course!).

July is also a fantastic month as it is the lead up to the Swiss National Day on 1^st August. Switzerland will turn 723 years old. Whooohoo! With that we have a ton of events planned in the next few weeks. Here are some of upcoming the highlights

** Sélection Beeler Aargauer Bierdeckel

* A beer yeast washed semi-hard cheese from the German speaking part of Switzerland. Yes, this was the one we insited you eat with the rind on.

** Sélection Beeler Toggenburger

* A wonderful pre-alpine, 8 months matured cheese. The cows that provide the floral milk for this cheese graze at about 900 meters above sea level. The landscape and production of this cheese is featured in our video (https://www.alpineexpress.com.au/video-story-of-artisan-swiss-cheese/) .

** Tête de Moine

* Translated this one means “Monks head”. It’s the one we shaved off the mini wheel with that funky apparatus called “Girolle”.

** Sélection Beeler Emmental

* This is one of the most iconic Swiss cheese varieties. This particular Emmental was matured for a very long 18 months. It is sweet and nutty and just gorgeous!

Sélection Beeler Jersey Blue
————————————————————
* Last but certainly not least in our tasting was the Jersey Blue from master cheese maker Willi Schmid and selected by the “Pope of Swiss cheese” Rolf Beeler. This unique and award winning cheese is made with the buttery rich Jersey cow’s milk. The combination of that milk with the blue veins make it a delicacy second to none. This cheese will become available in late September.

June marks the start of winter and winter is the best time of the year. Seriously. What’s better than a cheese fondue on a cold winter’s night? Or what about an authentic raclette party with artisan Swiss raclette cheese and boiled potatoes? Can you think of anything better? We certainly can’t!

The first one is with our friends at the Kelvin Club in Melbourne where we will be partnering with Lindt Chocolates to match four of our artisan cheeses to their famous Swiss chocolates. Yes, you heard right, cheese & chocolate. It definitely works – well, find out for yourself and come by on Thursday, 17^th July at 6.30pm. The other even isn’t until the end of July, but – oh boy – will it be awesome! On Wednesday evening, 30^th July – just 2 days shy of the Swiss National Day – we’re celebrating a Feast of one of the most famous Swiss delicacies with a boutique Raclette event at Spring St Grocer in Melbourne’s CBD. In the stunning cellar dining area adjacent to the cheese room, we’ll be showcasing three different raclette cheeses along with potatoes and condiments. The 3 course dinner starts at 6.30pm and costs $120 per person incl. drinks. Hi Cheese Friend,

Ooopsie, it looks we missed our April spot for our “monthly” newsletter. Another reason we’re a little behind was of course the two amazing events in April we proudly took part in:

The Swiss Festival in Melbourne was the first (pictured above, photography by francineschaepper.com (http://www.francineschaepper.com) ). Moved from February to April, the annual festival was blessed with the best weather we could possibly wish for: a mild 20-something degrees with lots of sunshine. Not surprisingly, people came in droves and tasted our wonderful artisan cheese and the amazing bread from our friend Ed from Ed’s Breads. Quite a few of you reading this actually joined our distribution list at that event – thanks and welcome to all of you!

Then there was the Soirée Suisse at the Como Cinema in South Yarra where the Goethe Institute together with the Swiss Consulate presented two brilliant Swiss films with a truly Swiss intermission where our Sélection Beeler Emmental (pictured in the title picture above) & Gruyère alongside Walmas’ Büdnerfleisch (Swiss style cured meat) and Ed’s Bread was served.

There is literally tonnes of cheese on its way at the moment ready for your winter appetite! Some of it is already here and stockists (https://www.alpineexpress.com.au/where-to-buy/) like Bill’s Farm, Leo’s Fine Food and Wine or Spring St Grocer in Victoria or Boatshed Market, Fresh Provisions or The Herdsman in Perth are well equipped with Swiss Raclette and a wide range of high quality, artisan high-alpine Swiss cheese from us.

** Cheese & Beer

There’s a great little cheese & beer event coming up for Good Beer Week in Melbourne. Join the guys from the Kelvin Club on Friday, 23 May for an evening which begins with a curated tasting of boutique beers Mountain Goat Steam Ale, Brooklyn Brewery Lager and Hefeweizen from 4 Pines Brewing Company.
