Hi Cheese Friend
First of all we’d like to welcome a tonne of newly subscribed cheese fans from the Taste Festival. Wow, what a festival it was: We served over 1,500 cheese boxes to the VIP ticket holders and made lots of new friends. We also gave away six unique cheese knives to the lucky winners of our Taste competition.

Before we introduce the newest cheese to our family of artisan Swiss cheese, we’d like to tell you two tales of our little red cows. The first incident happened at the Taste Festival when Tom thought it would be a great idea to have a ‘Red Cow’ representative standing proud on the VIP bar during the event. He placed one excited little Red Cow next to the Laurent Perrier display on the bar and – gee – she looked lovely. Half way through the day, Tom wanted to check on the well-being of the little Red Cow, only to discover she had disappeared. Outraged, we now believe someone nicked her! Can you believe it!?
The little Red Cow swimming in the Yarra A matter of days later, once again Tom had a great idea: He wanted to have another little Red Cow stand in for a creative Christmas photo shoot. He placed her on a bridge over the Yarra River in Melbourne and started shooting her at various angles. He thought she looked good, but wanted to try a few more adventurous poses so placed her even closer to the edge of the railing. Then, suddenly, out of nowhere a wind gust took her up into the air and blew the poor little Red Cow straight into the cold, brown Yarra. Well, some lucky fisherman will end up with a new toy now!
Luckily for Tom and for you all, we do have a few more of the little Red Cows available. Bill’s Farm, Walmas and Delicatess, for example, are selling them now, just in time for Christmas. They make great toys (or floating devices in Tom’s case!).
** Our newest arrival: Büffel Trüffel

But now to what we’re actually here for: artisan Swiss cheese! November brought a new shipment and with that a new and exciting cheese to Australia. One we have been watching very closely and are very excited to introduce is the glamorous ‘Büffel Trüffel’ from master cheese maker and friend of Rolf Beeler, Willi Schmid. Translating to ‘Buffalo Truffle’, you might guess that it’s made from buffalo milk and contains truffles. But not just any buffalo milk or any truffle, no, no, no, it’s artisan Swiss buffalo milk from a small herd of Rumanian breed water buffalo, located not far from Zurich and black truffle from the Neckertal (Necker Valley), located close to the cheese maker in the Northeast of Switzerland. The cheese is creamy and teeming with that amazing black truffle flavour. It’s a real knock out! Mouth-watering for sure with a price tag to match. But hey it’s Christmas only once a year, right? This one will make you the star of any Christmas party.

You can find the Büffel Trüffel at Leo’s Fine Food & Wine in Kew, Spring St Grocer in the Melbourne CBD and Bill’s Farm at the Queen Victoria Market.
