You receive this email because you signed up to our newsletter during our artisan Swiss cheese tasting at the foyer of 360 Elizabeth St last week.
First of all – welcome to our little cheese fan club! It certainly is a privilege to have you amongst us.
As promised, below is the list of cheese varieties you tasted last week (from right to left in the photo above):
** Sélection Beeler Aargauer Bierdeckel

* A beer yeast washed semi-hard cheese from the German speaking part of Switzerland. Yes, this was the one we insited you eat with the rind on.
** Sélection Beeler Toggenburger

* A wonderful pre-alpine, 8 months matured cheese. The cows that provide the floral milk for this cheese graze at about 900 meters above sea level. The landscape and production of this cheese is featured in our video (https://www.alpineexpress.com.au/video-story-of-artisan-swiss-cheese/) .
** Tête de Moine

* Translated this one means “Monks head”. It’s the one we shaved off the mini wheel with that funky apparatus called “Girolle”.
** Sélection Beeler Emmental

* This is one of the most iconic Swiss cheese varieties. This particular Emmental was matured for a very long 18 months. It is sweet and nutty and just gorgeous!

Sélection Beeler Jersey Blue

* Last but certainly not least in our tasting was the Jersey Blue from master cheese maker Willi Schmid and selected by the “Pope of Swiss cheese” Rolf Beeler. This unique and award winning cheese is made with the buttery rich Jersey cow’s milk. The combination of that milk with the blue veins make it a delicacy second to none. This cheese will become available in late September.
